About Chef Eric

Eric Vollono grew up in New York surrounded by music, the arts and food from all over the world. His mother introduced him to music, pottery and the arts at an early age and he was in an environment that fueled an artistic need that has been a driving force in his culinary career.


My Experience

Chef Vollono 's career started with kitchen shifts with a

private cruise company out of his hometown while in high school. After graduating Eric attended culinary school at

Johnson and Wales in Providence, RI

Upon graduation he moved to Chicago, IL.

It was in Chicago that Eric started working for multiple

award winning chefs while growing his culinary range. Chefs like

Art Smith at Table 52 (Two Time James Beard Award Winner), Giuseppe Tentori's BoKa (Food & Wine Magazine Best New Chef, 2008, One Michelin Star),

and Bill Kim's Urban Belly & Belly Q (Bib Gourmand, James Beard Finalist)

All of these restaurants received awards and recognition while chef Vollono was there and set a base for the next phase of his career.

It was during his time at Band of Bohemia, that chef Eric and his team, were awarded a Michelin star and named one of Chicago's 50 best restaurants 2 years in a row. After Chicago Eric moved to

New Orleans and worked for

James Beard award winner Nina Compton as her

Executive Sous Chef.

Chef Vollono is now in Denver and available for all of your private dining needs. 

Throughout all my years in the culinary world I have picked up an array of skills, and knowledge that I bring to all my clients. It is my passion to create a fully customized and unique experience for you and your guests.
