MEET THE CHEF
Chef Vollono attended culinary school at Johnson and Wales in Providence, RI. Upon graduation he moved to Chicago, IL. Working for multiple award winning chefs such as Art Smith, Giuseppe Tentori, and Bill Kim. While at Band of Bohemia, Chef Eric and his team, were awarded a Michelin star. After Chicago Eric moved to New Orleans and worked for James Beard award winner Nina Compton. Chef Vollono is now in Denver and available for all of your private dining needs.
My food philosophy is simple: the best ingredients, handled with respect and properly cooked. The rest comes down to working with my clients’ personal preferences and dietary requirements to create meals perfectly suited for their nourishment and pleasure.
My career in restaurants has allowed me to study many different styles and techniques. Have learned to do Creole dishes, a wide variety of pastas and dumplings, and a very strong background in Southeast Asian cuisines. One of my favorite ways to dine is Korean BBQ. I enjoy applying slight touches to my food from my past experiences that elevate each plate. The skills I've learned allow me to be very flexible when curating your private menu.
